Vegetable Penne Arrabiata in IP

A quick tasty dinner is everyone's favorite dinner, right? I am all about a quick meal that also taste great. If you want a quick meal inspiration, this is the correct recipe for you! InstantPot (IP) is LIFE!!!

Soul of pasta is pasta sauce so pick a good pasta sauce. I only like two pasta sauces: 1. Rao's Pasta sauces or 2. Trader Joe's Arrabiata sauce. Pasta itself is forgiving I feel. The #1 key ingredient and secret to good tasting pasta is Kalameta olives. I love the flavor olives bring. So here is the recipe:

Recipe for Vegetable Penne Arrabiata in IP
Serves: 2 | Prep Time: 10 min | Total Time: 30 min
Ingredients:
1/2 bottle Rao's Arrabiata Sauce
1 cup water
1/2 medium size onion, chopped
1/2 medium size green or any color pepper, chopped
2 cups Broccoli (optional)
10-12 capers
2-3 pickled jalapeno, chopped finely
10-12 pieces of Kalameta olives, chopped in half
3-4 cloves of garlic
Salt per taste
Black pepper per taste
1 tsp Italian seasoning
1 tbsp Olive oil
Direction:
Start InstantPot on Saute mode and add olive oil
Once oil is heated, add garlic and onion.
Saute for 2-3 min and add all other veggies except Broccoli
Saute vegetables for 2-3 min and add past sauce
Add salt, black pepper and italian seasoning and let the sauce cook 1-2 min
Add pasta and water. If you are using Broccoli add now.
Close the lid and cook on high for 8 min
You can pressure release right away and eat or you can wait 5-10 min before manual pressure release.
Notes:
Adjust and substitute vegetables as per your choice
The reason for adding Broccoli last is to prevent it from getting overly cooked and soggy.
if you like your pasta extra saucy, then add more sauce. You can add in the end when pasta cooked also.
