Thai Basil Vegetable Fried Rice

Do you love the aroma and flavor of Thai basil just like me? Thai basil is like a must have ingredient in this dish because it adds really nice aroma and flavors. This fried rice is very healthy because it has tons of veggies (triple the quantity of rice) and whole grain - brown rice. It is very quick to prepare and guaranteed to keep you full for a long time!

This dish is forgiving recipe. you can modify the ingredients as desired. add your choice of vegetables and make it spicier or sweeter by adjusting sauce amounts

Here is how to make it:
Ingredients:
1 cup brown rice - cook in Instant Pot or your desired method (For instant pot, I add 1.5 cup water in 1 cup rice and cook on Rice setting)
1/4 cup Thai basil leaves or as desired
1 zucchini - cut in medium size pieces
1 red bell pepper - cut in medium size pieces
1 onion - chopped
1 bunch of scallion - chopped (~1/2 cup)
2 tbsp Kimchi hot sauce (Seoul Spicy Kimchi hot sauce) or as desired
1 tbsp sriracha hot sauce
2 tbsp soy sauce
salt per taste
1.5 tbsp olive oil
Directions:
In a skillet or a wok, add oil
When oil is heated, add all the vegetables
Cook on medium to high flame until vegetables are semi-cooked (4-5 min). Don't over cook the veggies. You want to have them crispy and not entirely cooked.
Add Thai basil and the sauces.
Add the cooked rice and mix
Garnish with scallions and serve hot

Notes:
Feel free to add egg if you desire.
Adjust spices and veggies per your desire
