Edamame Fried Rice

What do you do with left over rice? Fried rice is easiest way to use up leftover rice for me. This Edamame Fried Rice with Kimchi hot sauce is my current favorite fried rice. Good amount of protein from edamame and spicy tangy taste from kimchi hot sauce makes this rice so tasty. This fried rice is easy to make in just 20 min so let's talk about how to make it

Ingredients:
2 cups leftover rice or freshly made rice (any type of rice is fine)
1/2 cup shelled Edamame boiled and ready to eat (you can follow instructions on the frozen edamame packet to cook them)
1/2 cup frozen Mixed vegetables
1 tbsp Kimchi hot sauce (I use S
1 tsp Stir fry sauce (i use trader joe's stir fry sauce)
1.5 tbsp Oil
Salt per taste
Direction:
In a wok or any pan, add oil.
Once oil is heated, add all the vegetables and stir occasionally until cooked
Add Kimchi hot sauce and stir fry sauce with salt now
Add rice and stir on low flame until all mixed
Cook for about 3-5 min and serve hot
Adjust salt and other spices per your taste and Enjoy on its own or with yogurt.
