Tabbouleh - Mediterranean Salad

I love Mediterranean food and Tabbouleh is one of the best Mediterranean dish that is very refreshing. I think of it as more of a condiment than a salad. Tabbouleh goes great with Mediterranean Bowl as well honestly anything else. I eat Tabbouleh as a side dish or even top it on pizza. Yes, you read that right and you can tell how much I love all the flavors of this salad. The freshness comes from fresh ingredients like parsley, lemon juice, and tomatoes.

Ingredients:
1 bunch of parsley (washed, dried and finely chopped)
1/4 cup bulgar wheat (cover and soak in 1/2 cup boiling water for 30 min - bulgar wheat should be cooked)
2 finely chopped Persian cucumbers
1 medium size tomato finely chopped
1/4 cup finely chopped onion (can substitute with green onion as well)
Juice from 1 lime (or as needed)
1/2 tsp salt (or as needed)
Direction:
Mix all the ingredients and stir
Can store in fridge for up to a week
Enjoy with any Mediterranean meal or anything else :)
