Sabudana (Sago) Khichdi

I would like to share this classic Indian recipe which is typically eaten when fasting. It is our all time favorite recipe for when fasting and even when not fasting. It is relatively healthy and made from just handful of simple ingredients. Usually simple recipes are the best ones! :)
It is another less than 30 min recipe that is easy for a weekday dinner!



Recipe
Serving: 2-3 people | Cook Time: 15-20 min
Ingredients:
1 cup Sago (Sabudana) - Soak overnight by covering 1-2 inches water on top. Next morning, strain out water and spread in a dish to dry for at least 1-2 hours. This will allows Sabudana to be non-sticky when making khichdi
1 cup medium size cubed potatoes
1/2 tsp crushed green chili
1/4 cup peanuts - semi crushed
1 tsp cumin seeds
6-8 curry leaves
1/4 - 1/8 tsp pinch of turmeric (optional)
2 tbsp olive oil or ghee
a pinch of hing
salt per taste
Direction:
Heat oil in a pan, add cumin seeds and curry leaves
Add hing and add potatoes. Add enough salt for potatoes and green chili
Once potatoes are cooked (about 3-4 min), add sago seeds and turmeric.
Add crushed peanuts and salt. Keep on mixing until the sago seeds become transparent/clear looking. It is important to keep on mixing so they don't stick.
