Pesto Paneer Bhuji

I love the flavor of Pesto and I also love Paneer (cottage Cheese). The combination of both is just out of this world. This is a twist to the traditional Paneer bhurji. You can add in other vegetables like Broccoli, edamame or even sun dried tomatoes.

Recipe for Pesto Paneer Bhurji
Serves: 2 | Cook Time: 15 min
Ingredients:
1 cup shredded or crumbled Paneer
2 tbsp pesto
1/4 cup finely chopped onion
2 tsp olive oil
2 cloves of garlic, chopped
salt per taste
red chili flakes (optional)
Method:
Saute garlic and onion in oil
Add Paneer and Pesto. Mix well and cook on low/medium heat for about 5min
Add salt and chili flakes as desired
