Loaded Zucchini Noodles (Zoodles) V,GF

I know there are tons of Zucchini noodles (Zoodles) recipes out there but mine is different! I use tons of seasonal veggies and herbs here and that is why I am calling it Loaded Zucchini Noodles! Even when I make regular pasta, I add tons of veggies so why not with Zucchini noodles! The simplest zucchini noodles I make is just Zoodles with Pesto, olive oil, Cheese, salt and pepper.

In This recipe, It takes longer to cut vegetables than to actually make it on stove! You will not regret eating a full bowl of this at all because it is all veggies with good quality fat coming from organic butter or EVOO (you can also add Paneer or boiled egg for extra protein). This is Vegetarian, Vegan, Gluten Free and Keto Friendly!


The best thing about Zoodles is that you can customize to whatever you want. Try it out and let me know your thoughts :)


As I always say in all my recipes, the amounts I give are customized for my taste. Feel free to adjust quantities and ingredients as you please. You know what taste you like more than I do!

Ingredients:

  • 1 big or 2 small size Zucchini, Spiralized

  • 1 green pepper (or any color you prefer), cut long

  • 1 carrot, spiralized

  • 1 corn kernel (seeds)

  • 3-4 slices of pickled jalapeno

  • 10-12 Kalamata Olives, cut half

  • 1/2 boiled beet, sliced long (optional)

  • 1 tbsp Pesto

  • 1 tsp Chili Lime Seasoning (From Trader Joe's)

  • 1 tsp Italian Seasoning

  • 1/2 tsp Red chili flakes

  • 1 tbsp Butter or Olive Oil

  • 1 tsp garlic paste

  • Feta Cheese (as desired)

  • Salt and Black pepper as needed

  • Basil (to garnish)


Direction:

  • Heat a pot with olive oil or butter

  • Add garlic, corn kernel and cut green peppers. Cook 2-3 min on medium flame

  • Add all the spices except salt

  • Add spiralized zucchini and cook for 1-2 min. Zucchini doesn't need to be cooked a lot otherwise it won't stay crunchy.

  • Serve in a bowl and garnish with fresh basil, feta cheese, salt and black pepper

  • Enjoy!


Notes:

  • Do not add salt until ready to eat because it would make your Zoodles watery

  • Omit Feta cheese to make it Vegan

  • Beet is optional if you don't like Zoodles to turn red

  • Add crushed peanuts or bread crumbs for crunchy texture
