Dudhi/Bottle Gourd Soup with Carrots and Roasted Red Pepper

Botthel Gourd/Dudhi or Lauki is one of the healthiest vegetables out there. It is heaven for people with vitta and it is highly regarded vegetable in Ayurveda. My mom used to make dudhi subzi at least once a week when I was little. I used to not like dudhi subzi and still don't prefer it but there many other ways to incorporate this vegetable in diet. I mostly make Handvo or Soup. Dudhi is magic for people trying to loose weight because it is 90% water.


This soup recipe that I am sharing today is one pot (Instantpot), under 30 min, easy to make recipe. This soup is little on the sweet side so if you are craving for hot and sour type of spicy soup, this is not it. This soup is nourishing and warming to body. It has Dudhi, Carrots and Roasted Red Pepper as main ingredients. It comes out naturally very creamy and smooth so no need to add any creamer and it has many herbs/spices.


Recipe for Dudhi/Bottle Gourd Soup with Carrots and Roasted Red Pepper


Serving size: 2 | Prep Time: 5 min | Total Time: 25 min


Ingredients:

  • 1 small size Bottle Gourd or 1/2 large size, peeled and cut in big pieces

  • 2 small/medium size carrots, peeled and cut in big pieces

  • 1/2 roasted red pepper - I roasted mine on stove

  • 1/4 cup water

  • 1/4 tsp Cumin powder

  • 1/4 tsp Black Pepper

  • 1/2 tsp Salt (as per taste)

  • 1/2 tsp Ghee

  • 1/8 tsp cinnamon powder

  • 1 piece of Clove

  • Pinch of Hing/Asafoetida

  • Lemon juice (optional)


Directions:

  • Start Instantpot on saute mode and add ghee, clove

  • once ghee is heated, add cinnamon powder, cumin powder

  • right after add bottle grourd, carrots and roasted red pepper

  • Add Salt and cook 4 min on high

  • Wait 5 min and manually pressure release

  • Using hand mixture, blend until it is reaches desired soup consistency (you can leave some pieces big if that is how you prefer soup or blend until it is creamy)

  • Add Black Pepper

  • Taste and add salt or other spices as desired




Notes/Tip:

  • If you think you have too little water , add some and simmer on saute mode until desired consistency is reached.

  • If you think there is too much water, simmer on instant pot until desired consistency is reached

  • Adjust spices as per your taste.
